What You Need

2 Cups of Beef Broth

1 Can of Cream of Mushroom Soup

3 Pounds of Pot Roast

1 Packet of Onion Soup Packet

6 Small Potatoes – Diced

1/2 Cup of Carrots – Chopped

1 Cup of Celery – Chopped

1/2 Cup of Onions Diced

Pepper

What To Do

1) OPTIONAL – I personally like to sear my meat on the stove top. I think it helps the pot roast retain flavor.

2) Place onion soup packet, cream of mushroom soup, beef broth and pot roast into crock pot and cover. Cook for 3 hours on high or 6 hours on low.

3) Turn over pot roast. Place veggies into the crock pot + add some pepper ( personal choice how much). Cook for either 1 hours on high or 2 hours on low.

Enjoy

This is absolutely delicious! I made this a couple months ago, and I am making again tonight. My boyfriend has been begging for it.

We are huge garlic fans at this house. I cut slits in my pot roast and add cloves of garlic.

I have a better one for you. Chuck Roast (seared) Put in crock pot. Add some onion, 1 package each (packaged not bottled) Ranch Dressing, Italian Dressing, and Brown Gravy (all packets) Add water just till covered, cook on high for 5 hours.

We make 2 roasts at a time so I add 2 packets of each of the dressings/gravy. If I remember I pick up some garlic too but it’s really not necessary. I put a full onion in just whole not cut up. You can add your potatoes/veggies at the last hour or so. My families favorite. We had it again just last week.

So is total cook time 8 hours on low for a 2.5 lb roast?

  • Dina

Question, it may be a dumb one! LOL. So you are putting the veggies in the last 2 hours of cook time on low? and turn the roast over at the same time.

  • Wendy

I made for dinner tonight and it’s one of the best pot roast I’ve ever had. I cooked the meat on low for five hours, and then added lots of carrots and potatoes, so that required an extra 4-5 extra hours on low. Next time I’ll continue to add the veggies at noon however I’ll kick the temperature up to high. It was a huge hit with the kids (6 & 7) as well.

FAQs

Do you have to brown a roast before putting it in the crock pot? ›

"Browning, or caramelizing, meat before putting it into a slow cooker isn't 100 percent necessary, but it is well worth the effort for the most flavorful and full-bodied end result," he says. "The caramelized surface of the meat will lend rich flavor and color to the finished dish."

How many hours should a roast cook in crock pot? ›

Pat the roast dry and rub with seasoning, then with flour. Sear in a skillet for 2-3 minutes per side. Combine gravy ingredients and add them to the Crock Pot along with the roast, potatoes, and carrots. Cook on low for 8-10 hours or on high for 5-6.

Is it better to cook a roast on high or low in a crock pot? ›

A 2 to 3 lb. chuck roast should cook in a crockpot for 6-8 hours on low heat or 4-5 hours on high heat. The cooking time can vary depending on the desired degree of doneness, but it's best to slow cook it on low heat for a more tender and juicy roast.

Does a roast need liquid in crock pot? ›

Some recipes call for liquid, some do not. It mainly comes down to the type of meat you use. Cuts like chuck roast will release more fat and moisture than leaner cuts, so they don't need any water. In addition, the slow cooker itself creates some moisture, which helps keep the meat juicy.

When should I add potatoes to pot roast? ›

Cover and cook for 3 hours, or until the roast is very tender. Add the carrots and potatoes to the pot when there's about an hour of cooking time left, turning the roast over when you do. To serve, spoon any excess fat off the surface and slice or shred the beef to serve with the veggies, drizzled with sauce.

Why do you put flour on a roast? ›

Liberally seasoning your meat is a must. Place your meat in a zip top bag with flour, salt and pepper and shake to coat. The flour will create a crust on the top of the meat when you sear it and thicken the juices for a nice gravy-like consistency.

Why is my roast still tough after 8 hours in the crock pot? ›

If your crock pot roast is tough, it is possible you didn't use a boneless chuck roast, in which cases some cuts of meat will never become fall-apart tender OR more likely, you did not cook your beef long enough. If your pot roast seems tough, cook on!

How much liquid do you put in a crock pot for a pot roast? ›

pot roast, you will need to add 2-3 cups of water to your Crock Pot. Any less and your pot roast will be dry, any more and it will be too watery. I would use 1 cup of beef stock or broth. Over 6 hour there will be a little evaporation, but not much.

Do vegetables go on top or bottom in crock pot? ›

Slow cooker recipes have (obviously) long cook times, and it's the meat—not the carrots—that benefit from it. By placing the protein at the bottom (closest to the heating element), and vegetables at the top, you can keep your plant parts a little more toothsome, while ensuring your meat is fall-apart tender.

Is 4 hours on high the same as 8 hours on low? ›

A general rule of thumb from Luis Sanchez, senior category manager for the appliance manufacturer Breville: To go from "High" to "Low" (or vice versa), multiply (or divide) the original time by 1.5 to 2.5 hours. And as with the cooking times for specific ingredients, these times are approximate.

Why is my pot roast tough in the crock pot? ›

There are several reasons why this could have happened even after so much cooking. First, your choice of a rump roast could be a factor since cuts from the hind quarter are very muscular and, since muscles are the most resistant to breaking, this cut is quite stubborn when it comes to becoming tender.

Do potatoes go on top or bottom of meat in Crock Pot? ›

Place firm, slow-cooking root vegetables like potatoes and carrots at the bottom of the crock and pile the meat on top. Set the heat level: A general rule of thumb is that cooking on the low setting (170 degrees F for most models) takes about twice as long as cooking on high (280 degrees F on most models).

When should I add vegetables to Crock Pot roast? ›

For example, if your family isn't fond of carrots, replace them with parsnips or chunks of rutabaga. Or add more potatoes to the pot. For extra color, add some frozen green beans or mixed vegetables about 30 to 45 minutes before the pot roast is ready.

Do potatoes go on top or bottom of roast? ›

directions. Put potatoes, carrots and onion on bottom of crockpot. Place the roast on top, fat side up. Pour in water or beef broth.

Why do you have to cook a brown pot roast before cooking? ›

"Creating that Maillard reaction, where you are caramelizing the proteins and natural sugars in your meat, is building flavor. That flavor will then slowly make its way into the braising liquid and create a depth of flavor you just can't achieve otherwise."

Does browning meat make a difference? ›

During cooking, beef undergoes many chemical changes, affecting its appearance, taste and texture. Browning or searing the lean outer surface of your beef produces the rich, deep meaty colours, flavours and aromas we love. This browning process is known as the Maillard reaction.
