I absoutlety LOVE no-bake cheesecakes- but that’s not really a secret. I wrote a whole cookbook about no-bake desserts. I’ve heard before from people that they don’t like cheesecake, but then they take a bite of one of my no-bake cheesecakes and they take back their words!

The first thing you need to know about no-bake cheesecake is that they’re amazing. The second thing is how to make a crust in a springform pan. There’s a few easy steps to make a beautiful crust, and the best part is, the crust can be made from so many different types of cookies or sweet crackers. Oreos (all flavors!), graham crackers, shortbread cookies, peanut butter cookies, waffle cones- the list goes on!

Before we dive into this collection of the BEST No-Bake Cheesecake Recipes, it all starts with my basic (but BEST) No-Bake Cheesecake and No-Bake Chocolate Cheesecake. These two recipes are the base recipes for so many variations of cheesecakes on my blog. I love using melted chocolate in my recipe because it totally changes the dynamic of the cheesecake!
