I have always loved the mixture of chocolate and marshmallows, so when I saw this Rocky Road Candy, Iknew I couldn’t pass it up!

Rocky Road Candy
Ryder sees me cooking all the time and loves to help out. He always says, “Mommy! Are you making a recipe?” Which is always followed by, “Can I help with the recipe?”
I don’t always get to say yes since I cook with egg and raw meat a lot, but with this Rocky Road Candy recipe. I was delighted I could say yes! We had a blast stirring together and plopping them on the wax paper. The only problem was the lesson in patience on waiting for them to set up…I don’t know if it was harder for him or me! Yum!

A simple, delicious sweet treat that is fun to make!
As with any of our recipes, calorie counts and nutritional information varies greatly depending on which products you choose to use when cooking this dish.
Once again, I used my Hamilton Beach Programmable Insulated Slow Cooker. It is perfect to melt chocolate and easy to clean up! Your favorite 5-6 quart crock pot will work too. 🙂
All slow cookers cook differently, so cooking times are always a basic guideline and shouldalways be tested first in your own slow cooker and time adjusted as needed.

Chocolate has a melting point between 86- 90 degrees Fahrenheit. Excessive heat is not needed to melt it. Because of chocolate's low melting point, a slow heating process like using a crock pot is optimal; plus the crock pot allows busy cooks to work on other projects while chocolate safely ...
The best way to melt almond bark in a crock pot is to cut it into chunks, then cook it for at least one hour over low heat. The almond bark may still look formed after an hour, but when you stir it, it will reveal a liquid interior and will melt into the rest of the ingredients.
Rocky road ice cream is a chocolate-flavored ice cream. Though there are variations from the original flavor, it traditionally comprises chocolate ice cream, nuts, and whole or diced marshmallows.
Don't cover it--you don't want moisture to form inside the lid and drop down into the chocolate. After 30 minutes, stir the chips (I used long iced tea spoons). My chips were soft and completely melted after 30 minutes; however, slow cookers can vary, so yours may need to heat more or less time.
Simply put the chocolate filled jars into the crock pot {you can put multiple jars in at the same time} then pour water in around the jars, until it is about half-way up the side of the jars. Be careful NOT to get water INTO the jars. It has disastrous consequences on the melting process.
Candy Melts®, candy wafers, chocolate coating, almond bark—they're all products made for dipping, molding, and coating without needing to temper chocolate. I'll call them candy wafers here, but if you see them sold under another name, don't be alarmed. They'll all work just the same.
In the case of chocolate chip cookies, though, you can definitely use them interchangeably. You'll notice the chocolate chips will be mostly be intact, while the chopped baking chocolate often melts into lovely little puddles of chocolate onto the cookie. Either way, you will almost always end up with a tasty treat!
Our original Rocky Road is still as popular as ever with sweet marshmallows, crunchy nuts and red wine jelly covered in delicious milk chocolate. Hide it somewhere if you don't want to share! Ingredients: Milk chocolate, marshmallows, red wine jelly, peanuts, almonds.
The most famous commercial brand of rocky road in Australia, is the Darrell Lea "original recipe" version, sold as "Rocklea Road". This version does not have cherries or raspberries, instead having bigger marshmallow chunks and more coconut.
In the UK, you might hear Rocky Road referred to as 'tiffin'. British tiffin tends to focus more on a medley of dried fruits nestled into the chocolate base. In contrast, American Rocky Road usually includes marshmallows and nuts.
What is Rocky Road Ice Cream? Rocky Road is a chocolate-based ice cream flavor mixed with chopped almonds and marshmallow pieces. While most Americans are familiar with Rocky Road ice cream, many are unaware that it was originally inspired by a brownie-like dessert also called Rocky Road.
They are both very similar. However, Rocky Road is a little chunkier using larger peanuts and actual marshmallow chunks. On the other hand, heavenly hash has extra added Chocolate. Rocky road is a more common flavor in your average U.S. ice cream shop.
Never use a high heat setting, as this will cause the candy to burn. The key to melting the candy perfectly is to use a low, slow heat. Make sure that your slow cooker is on a heat-safe surface, such as tile or marble.
The most popular method is to add a bit of fat to the chocolate. The fat you use should be flavourless to avoid altering the taste of your chocolate. Cocoa butter is the best option as it's the natural fat present in chocolate. Alternatively, you can use a bit of vegetable oil or shortening.
