Leftover Prime Rib Recipes

I love making a beautiful rib roast over the holidays for my family. Every year, one of my favorite things to do is to figure out what to do with prime rib leftovers - my family always tries something new!

But of course, I have a few staple favorite recipes for leftover prime rib. It's a cut of beef that suits so many different dishes: you can add it to everything from pasta to sandwiches, stir-fries, and casseroles.

What to do with Leftover Prime Rib

My creamy penne pasta is one of my favorite ways to use up holiday leftovers. It's ready in less than 30 minutes and beyond flavorful.

It’s like Applebee’s creamy penne pasta with sliced prime rib, but better, complete with cremini mushrooms, sun-dried tomatoes, and a creamy pasta sauce.

My family loves this recipe so much that it is a regular at our table. Although we love it made with prime rib, it is also a perfect solution for leftover steak, smoked brisket, beef tenderloin, and basically any leftover beef you may have.

I have been known to buy extra beef just so I could make this favorite creamy pasta with the leftovers. I know you're going to love my prime rib leftover pasta recipe as much as my family and I do!

How long is spare prime rib good for?

Prime rib leftovers last 5-7 days in the refrigerator wrapped tightly in plastic or foil or stored in an airtight container.

How do you freeze cooked prime rib?

Allow prime rib to come to room temperature, then wrap in freezer paper and a layer of plastic wrap. Label it with the freezing date and store it for up to 1 month.

Prime rib is expensive because it is considered one of the best cuts of meat. As the highest grade of rib roast you can buy, prime rib is juicy, tender, and well-marbled. Well well, I had picked up some brisket on sale and it was in the freezer for a while. Thought OK let’s get it out and cook it up but what do I do with brisket. It was a pound of sliced smoked brisket.

I found this recipe that said use this recipe if you have brisket as if it were prime rib. So I did follow the recipe pretty much exact except for the fact my husband is somewhat lactose intolerant. So heavy cream wouldn’t work for him I did get half-and-half and use that and put some cornstarch to thicken it up which was excellent.

We just had it for dinner and we had to have seconds but for us it’s plenty for at least six or seven people.

Thank you for the recipe I will definitely keep the sauce recipe in my file

    Can this be frozen?

Hi Brian! I haven't tried freezing this one because of the heavy cream, and I personally wouldn't recommend it. Creamy pasta sauces like this rarely hold up well in the freezer.

FAQs

How long is leftover prime rib good for? ›

As soon as dinner's finished, wrap any leftover prime rib tightly in plastic wrap and refrigerate or freeze. While it's best the next day, leftover prime rib is good for between five and seven days in the fridge or up to six months in the freezer.

How do you reheat prime rib without making it tough? ›

Reheat it in a steamer

Giving the meat a quick steam session is a nice, gentle way to warm up sliced prime rib. To make it happen, grab a steamer basket (or a plate and some tin foil, or an aluminum pie plate), put it in a pot with a few tablespoons of water in the bottom, and bring the liquid to a simmer.

Can you shred leftover prime rib? ›

Slice the Prime Rib thinly across the grain, then cut again into small shredded pieces. Sprinkle in some of the meat and fold the tortilla over, cooking in a hot pan for a few minutes on each side until the cheese is melted.

Can you freeze leftover prime rib? ›

If you want to store it for a longer period of time, place it in the freezer. Leftover prime rib keeps up to six months in a frozen state.

What's the best way to reheat a piece of prime rib? ›

Preheat the oven to 250°F (120°C). Wrap the roast loosely in aluminum foil to retain moisture and prevent drying. Place the roast on a wire rack set over a baking sheet to allow air circulation and prevent soggy bottoms. Heat until the internal temperature reaches 130°F (54°C).

Can you eat 5 day old leftovers? ›

After 3 to 4 days, germs, also called bacteria, may begin to grow in refrigerated leftovers. This growth increases the risk of food poisoning, also called foodborne illness. Bacteria typically don't change the taste, smell or look of food. So you can't tell whether a food is dangerous to eat.

How do you reheat a fully cooked prime rib roast? ›

Preheat oven to 350°F. Remove roast from packaging. For rare roast place in oven in a heat-proof casserole dish and heat for approximately 15 minutes per lb or until the internal temperature reaches 115°F. We recommend using an internal meat thermometer for reheating.

How do you reheat leftover prime rib in the oven? ›

Drizzle the meat with ¼ to ½ cup beef broth, stock, or leftover au jus to help steam the meat as it heats. Tightly cover the pan with a lid or foil, then place the pan in the oven for 15 to 30 minutes until the meat is warmed through in the center. (Timing will vary depending on the size and thickness of the meat.)

Why is my prime rib tough? ›

Prime rib is at its best cooked rare or medium rare — it should not be cooked past medium (140°F) or all the fat will melt out of the meat, leaving it tough, dry, and chewy. After the prime rib is cooked, make sure to let it rest for 30 minutes for the meat to reabsorb all the delicious juices before carving.

Are prime rib leftovers good? ›

Like fried chicken, prime rib is just as tasty (some would say even better) cold rather than hot. Use thinly sliced leftover beef in sandwiches and main dish salads or chop it and add it to a weeknight stir-fry, sandwich, or soup.

What can I do with the bones from prime rib? ›

And don't forget to use those bones. If your prime rib came bone-in, save 'em, roast 'em, and turn 'em into spectacular bone broth. You can use it to make soups or just as an on-its-own sipper that'll keep you feeling warm and cozy all winter long.

Should I remove bones from prime rib before cooking? ›

Bones have a higher thermal resistance than meat, meaning the meat around the bones will cook slower than the rest of the roast, leaving those sections extra-tender and juicy. To make carving easier, you can remove the bones from the raw beef and tie them back on if you'd like.

Can I reheat prime rib in air fryer? ›

Preheat the air fryer to 225 degrees Fahrenheit. Wrap the roast in aluminum foil with ¼-1/3 cup of au jus, beef broth, or stock, and tightly seal. If reheating slices, arrange them in a single layer, then add the liquid of choice and seal the foil.

How do you reheat prime rib in a cast iron skillet? ›

Our current favorite way of reheating cooked meat is in a cast iron skillet! We simply heat up a cast iron skillet over medium-high heat, and smear it with a little vegetable oil. Then we add our cooked meat (in this photo, roasted pork loin with herbs and garlic) and sear it for a few minutes, turning it frequently.

Does freezing prime rib affect quality? ›

Beef can be safely stored in the freezer for anywhere from six months to up to a year. However, the longer you keep it frozen, or if it's been improperly wrapped for storage, the more chance there is for the quality of the beef to be negatively affected.

Can I eat cooked steak after 5 days? ›

USDA recommends using cooked beef within 3 to 4 days, kept refrigerated (40°F or less). Refrigeration slows but does not stop bacterial growth. USDA recommends using cooked leftovers within 3 to 4 days.

Can prime rib be reheated? ›

“To keep prime rib moist as you reheat, make sure the pan is tightly covered, the piece of meat is not too large, and there is some added moisture in the pan, like broth.” If you'd like to add a nice crust, pat the reheated roast dry.

How long can you keep a vacuum sealed prime rib in the refrigerator? ›

Vacuum sealing can extend the fridge life of meats as well, but because anaerobic bacteria can grow at temperatures above 3°F, all vacuum-packed refrigerated meats should be unsealed and cooked within 10 days.
