I love this time of year. I have always been huge on the holidays & now that I have a child it’s that much more fun to go all-out with the decorating, celebrating and of course- baking!

Or sometimes, lack thereof. Between the pumpkin pie I made last weekend & the pumpkin seeds that will need roasting next weekend, it’s nice to give the oven a break once in awhile. These No Bake Peanut Butter Pumpkin Bites are the perfect, festive solution!

These easy, no bake pumpkin peanut butter bites are SO good- since first publishing this recipe in 2013, it’s been shared on Pinterest thousands of times and many pinners have even told me that making these is one of their annual Halloween traditions!

These sweet treats are popular for a reason- they’re delicious, easy to make, adorable, and perfect for any fall or Halloween occasion! And they’re even simple enough for the kids to make!

Below are some tips and tricks for making these absolutely delicious No Bake Peanut Butter Pumpkin Bites!

Can You Use Other Nut Butters?

If you have a peanut allergy or peanut sensitivity, you can totally try this recipe with your chosen nut butter. I haven’t tried it myself, but having used various nut butters in other recipes in the past I can say that I think it will work- you just might need to add a little more powdered sugar or a little less of the nut butter due to other nut butters being a little thinner.

If you increase your powdered sugar they might get a bit too sweet so I think using slightly less nut butter might be the way to go, but that of course will yield less pumpkins.

The good news is that this recipe is easy enough to try and experiment with if needed- if you do happen to try it with another type of nut butter, will you please let me know how it works out so I can update this for others?

Troubleshooting: Issues with Food Coloring & Sweetness {EASY Fixes!}

If you’re finding these to be overly sweet, you have a few options here: either switch your peanut butter brand, use less sugar, or both.

While 4 cups is a lot of sugar, this recipe makes 30 bites so there’s not that much in each one. That said, since these are no bake and don’t have eggs or anything, they’re easy to test as you bake!

Start with 2 cups of sugar, mix well, and then taste to see if they’re sweet enough. Continue adding a little bit of sugar at a time until they’re to your liking!

As for the peanut butter brand, some brands start out sweeter than others and that can affect the taste. I always use and recommend JIF {not sponsored}.

Having issues with your food coloring? Make sure you’re using fresh, not expired food coloring, and I really suggest using food coloring gels vs. liquid drops. It’ll prevent the pumpkins from getting dry, you’ll need way less of it, and it doesn’t have that weird taste that you get from lots of food coloring {unless you go really, really overboard}. Can the Kids Help?

Of course! Kids can ALWAYS help in the kitchen! For this recipe, kids of all ages can help with almost every step. There are no knives involved, just a lot of measuring and mixing- so it’s basically a math and science lesson in the kitchen!

I’d suggest helping them with the food coloring, just because it can get messier with younger kids and kids of all ages can be a little heavy-handed with the food coloring. You also might want to help with the toothpick part depending on the age of your kiddo.

No Bake Peanut Butter Pumpkin Bites Recipe

Ingredients:

¾ Cup Butter, Softened
1 Cup Creamy Peanut Butter
4 Cups Powdered Sugar
Orange Gel Food ColoringMini Chocolate Chips

Directions:

1. Cream Butter and peanut butter together until smooth.
2. Slowly add in powdered sugar ½ cup at a time. Mix until well combined and the dough is no longer sticky.
3. Add food coloring in, a little bit a time, until you reach the desired color. Mix until color is uniform.
4. Refrigerate for 10 minutes.
5. Using your hands, roll dough into 1-inch balls and place them on a cookie sheet lined with parchment paper.
6. Using a toothpick, gently press into the sides, adding 4-5 indentations per ball.
7. Gently place your mini chocolate chip onto the top or your ball, pointed side up.
8. Refrigerate for an additional 15 minutes or until ready to serve.
9. Refrigerate leftovers in an airtight container.
